Philippines: Pancit Canton

           After experiencing many types of food from both my Filipino and Spanish background, I’d have to say that pancit is on the top of my list. It is the Philippines’ national dish, and is a favourite among many other nationalities. It is the perfect dish for surprise visits from friends and family. It will look good no matter the occasion, from a simple lunch in between work to a wedding. I have been eating pancit since I was a kid. My Lola (grandma) would occasionally cook different variations of this dish. What is so good about this dish is that you can modify it to your liking! If you’re into spicy foods, you can add a little spice. If you prefer sour food to spicy food, you can add lemon. If you think mushroom is awful, then replace it with something else, or get rid of it altogether. Maybe you can even try it in-between a bun?
            Not only does it taste good, it is also a very nutritious meal. The noodles provide carbohydrates and the vegetables provide all sorts of minerals and vitamins. It is also very quick and easy to cook up. It can be done in a matter of minutes. Even if you’re low on money you can still afford to enjoy this dish. As I said before, it is perfect for any occasion.


Recipe

Ingredients

– ½ medium sized onion, finely cut
– ¼ medium sized garlic head, pounded
– 2 tbsp soya sauce
– 1 tbsp vegetable oil
– ground black pepper
– 2 packages pancit canton (just the noodles, found in Filipino and Chinese grocery stores, such as Kim Phat and Kim Hour on Van Horne street)
– 2 medium sized carrots, sliced in strips
– ¼ cup chicken, cooked and flaked
– pinch of pepper
– salt to taste
– 2 cups cabbage, chopped
– 2 eggs, boiled and cut in halves
– lemon wedge (or anything you want, really) (optional)

Procedure

  1. Sauté garlic and onions. When slightly brown, add carrots and cabbage.
  2. Let cook for about 3 minutes.
  3. Add chicken broth, soya sauce, and chicken flakes. Let it boil.
  4. Add salt to taste and pancit noodles.
  5. Sprinkle with pepper.
  6. Once cooked, arrange on a plate.
  7. Garnish with boiled eggs.
  8. Sprinkle with lemon or add anything else before eating.
